Tailoring

I’d recommend tailoring so you can get Truefaith Vestments, which will last until you replace them in AQ.

You should be able to find a decent tailoring guide online, but basically just save all the cloth you find as you level. You may need to go out of your way to farm some Mageweave and a lot of Runecloth later on though.

Gathering

I highly recommend herbalism or mining as your second profession. Gathering is essential for a priest to make money, seeing as the DM lasher farm technique is nerfed in Classic.
